Shut the gas off before anything else#
The first move is to stop the flame you cannot control. Close the shutoff on the gas line feeding the range so the burner extinguishes. Since the burner is passing gas past a valve the knob can no longer close, removing the supply is the safe first step ahead of any diagnosis.
The Whirlpool-platform valve#
Jenn-Air shares its burner-valve design with Whirlpool and Maytag. Each valve is meant to seal shut at off, but heat cycling over the years stiffens its internal grease and wears the seat until it stops closing fully, leaving a flame lit. This is a sealed gas valve that gets replaced with the correct part; it is not adjusted or cleaned back into service.

Check the knob first#
The knob is the cheaper suspect. If the collar inside the knob has rounded off, the knob reaches off while the valve stem stays partly open and gas keeps flowing. Remove the knob and turn the bare stem to off with pliers — if the flame dies, replace the knob; if it stays lit with the stem fully closed, the valve is the fault.
Don't rig it and don't wait#
Never tape, wedge, or block the knob to hold the burner off, because the valve is still leaking gas beneath it. The only safe interim state is the gas supply closed. Replacing a Jenn-Air burner valve is live gas work that needs a leak test afterward, so it is a technician's job rather than a homeowner fix.
