The short answer
Establish first whether your cabinet has a plumbed ice maker at all. Most European refrigerators of this platform do not: ice comes from a twist tray in the freezer, or from a small chill compartment on the cold plate. If that is your cabinet, poor ice is a freezer temperature question and the fix is usually free. If a water line is connected, the diagnosis starts at the supply instead.

Unplug the refrigerator before removing a panel or reaching behind the cold plate or the rear freezer panel. Never chip or lever ice away with a knife, a screwdriver or any other tool: refrigerant tubing is bonded directly behind those surfaces and a puncture ends the cabinet. Do not use a heat gun or boiling water on a plastic liner, which deforms permanently at low temperature. On a plumbed variant, close the shut-off valve before disconnecting anything. Where the service line falls
The cabinet has been fully defrosted, the doors seal and the control is at its coldest, and an overnight reading in the freezer is still nowhere near 0 °F (−18 °C) or below. A frost-free cabinet ices up solid again within days of a full defrost, which points at the defrost heater, its cut-out or the control. The compressor clicks and stops repeatedly rather than running steadily, which needs a meter on live terminals. You have a plumbed variant and the fill tube freezes solid again every time it is cleared, which points at a valve seeping past its seat. The repair involves the sealed refrigerant circuit, which is regulated work requiring recovery equipment.
