The short answer
A dishwasher smell is nearly always trapped food and a damp environment, and it lives in the filter, the gasket and the drain path rather than in the machine as a whole.
What you observe
- A sour or rotting smell when the door is opened
- Black or pink film in the door seal and along the tub lip
- A musty smell on clean dishes
- A smell that is worse after the machine has stood unused
- Standing water with a film on it
- Mould around the detergent dispenser or the vent
