Can I pour water into the mould to test it?

You can, and it is a useful test. If hand-filled water freezes and harvests normally, the fault is upstream in the water supply rather than in the ice maker.

How long should a new machine take to make its first ice?

Give it a day. A compartment that has just been brought down to temperature has to get the mould cold as well, and the first few harvests are always the slowest.

My FF makes ice but the cubes stick together.

That is melt and refreeze in the bin, which means the compartment is warming between cycles — usually the door, the seal or how often it is opened.

Is a frozen fill tube a repair or a symptom?

Both. Clearing it restores ice, but it froze for a reason — usually an overshooting fill or a compartment running colder than it should — and that reason will bring it back.

The ice tastes stale. Is that a fault?

No. Old ice absorbs odour from the cabinet. Empty the bin, let it refill, and judge the new ice rather than the old.
