The short answer
A stale smell in a European dishwasher usually has a mechanical cause rather than a hygiene one. The small non-return flap in the sump is supposed to stop drain water coming back into the machine, and when a fragment holds it open, dirty water sits in the sump between cycles. Add condensation drying, which leaves the tub damp, and a door that is kept shut, and the smell follows.

Use only coarse dishwasher salt in the softener reservoir. Do not cut, shorten or repair the inlet hose, which carries mains wiring in its outer sleeve to a solenoid at the tap end. Where the service line falls
The filter is clean, the flap seats, the seals are clean and a hot empty cycle has been run, and the drain smell returns within days. Dirty water is visibly returning into the tub between cycles with a flap that hinges freely, which points further down the drain path.
