The short answer
A Bertazzoni FRZ freezer that runs but will not hold temperature is describing an airflow or defrost fault far more often than a refrigerant one. On a dedicated freezer the seal and the loading pattern also matter more than they do on a combination cabinet, because the door is opened less often but stands open longer when it is.
What an owner actually sees
- The compressor runs continuously and the cabinet still drifts warm — Cold is being produced and not retained or not distributed.
- A solid frost sheet across the evaporator or the rear wall — Not the usual light dusting. A continuous sheet is the airflow blockage made visible, and it is the leading cause on this family.
- Ice cream soft, meat surfaces thawing at the top — The cabinet is above the safe holding point. A freezer holds food safely at 0 °F (−18 °C) or below.
- NEAR MISS — nothing runs at all — Silence, no fan, no lights, no compressor means a supply, relay or board fault rather than a cooling fault.
What it usually turns out to be, in order
- Frosted evaporator from a stalled defrost cycle — First on this family. A defrost heater, thermostat or control that has quietly stopped working lets ice accumulate over weeks until airflow collapses, and the owner sees warmth long before anyone sees frost.
- Door seal deformed, or the door not closing square — Second, and ranked higher here than on a combination cabinet. A dedicated freezer is opened less often, so a marginal seal goes unnoticed for months while it feeds the evaporator a steady supply of humid air — which then becomes cause one.
- Evaporator fan stopped or dragging, on models that have one — Third. It produces the same warm cabinet with none of the frost to show for it.
- Condenser coil blinded, or the cabinet boxed in with no clearance — Fourth, and unusually common on this appliance because of where these cabinets live. It degrades capacity rather than removing it, so the freezer drifts warm slowly and never recovers after a big load.
Check in this order, and why
- 1. Put a thermometer in the cabinet and leave it overnight — Judge the fault by a number rather than by how the food feels, and compare it against the setpoint.
- 2. Look for a frost sheet on the evaporator or rear wall — A continuous sheet names the defrost system immediately.
- 3. Test the door seal with a sheet of paper at several points — Paper that pulls out without drag marks a dead spot.

Safety
Unplug the appliance or switch off its breaker before removing any panel. A capacitor can hold a charge after the power is off. Never thaw a frosted evaporator with a heat gun or an open flame — the coil and the liner behind it will not survive it, and a punctured coil turns a small repair into a sealed-system job.

Owner fix or service call
Call once the thermometer confirms a real loss, the evaporator is clear and the seal and condenser are good, because what remains is thermostat, control and sealed-system work. Call immediately, without further testing, if you smell burning, see oil outside the tubing at the compressor, or find the compressor hot and silent. On this family the practical line is the evaporator cover: in front of it is owner work, behind it usually is not.
