The short answer
On a Brigade oven the usual door faults are a flattened or damaged seal and a hinge that has dropped under constant use, both of which let heat out and make cooking uneven. Clean and inspect the seal first. A door that no longer closes square, or glass that is cracked, is engineer work rather than a kitchen fix.
What you observe
- Heat escaping visibly at one edge during a cook — The seal is open along that edge.
- The door needs lifting or slamming to catch — A dropped hinge or a worn catch.
- Uneven cooking front to back — Heat lost at the door while the back stays hot.
- A rope seal flattened, torn or hanging loose — Normal wear on a working line, and a real heat loss.
- NEAR MISS - steam at the vent during a wet cook — That is the vent doing its job.
Causes, most likely first on this brand
- A flattened or damaged door seal — First. The seal is a wear part on commercial equipment, and once it has compressed or torn it no longer closes the gap, so every cook loses heat continuously at that point.
- A hinge that has dropped — Second. Doors are leaned on and loaded against all day, and a hinge that has moved leaves the door out of square so no seal can close it.
- Grease and carbon on the sealing faces — Third, and the easiest to fix. Baked deposits on the frame face hold the door off its seal in a way that looks like a worn seal but cleans off.
- A worn catch or striker — Fourth. A door that needs slamming is being held shut by force rather than by a catch, and it will eventually not stay shut at all.
- Cracked or delaminated door glass — Last, and not a kitchen repair. Damaged glass on commercial equipment takes the oven out of service.
Check in this order, and why
- Look along the closed door for an even gap — Heat and light escaping at one point locates the fault.
- Run a finger along the seal when cold — Flattened, hard or torn sections are obvious by feel.
- Lift the door handle gently when closed — Movement means a hinge or catch rather than a seal.
- Check the frame face for baked deposits — This is the cause that cleans off rather than being replaced.

Safety
If you smell gas, do not touch any switch, do not use a light, leave the building and call the gas emergency number from outside. Let the oven cool fully and isolate it at its gas valve and breaker before working on the door - commercial doors and frames hold heat long after the burner stops. Never wedge or tape a door to make it close, and take an oven with cracked glass out of service rather than working around it.
When to call a technician
Call a registered gas engineer when the sealing faces are clean and the seal is still flattened or torn, when the door no longer sits square, when the catch will not hold, or when the glass is damaged in any way. Mention that the oven is losing heat at the door, because a door that will not seal also affects how the oven behaves at temperature and how hard the burner has to work.
