F1-H means there may be a problem with the oven temperature sensor, the control or the wiring between them. The sensor is the usual cause and, on many Amana ovens, one an owner can test and replace with basic tools and the power off; do not cook with the oven until F1-H is cleared.

Safety
Switch off the breaker or unplug the range before removing the sensor; a capacitor can hold a charge after the power is off. Do not let the connector fall back through the wall into the insulation, and do not pull the lead hard; a stretched lead is one of the faults you are trying to fix. On a gas range, if you smell gas, do not switch anything on or off, leave the building, and call the gas utility or emergency services from outside.
When F1-H needs a technician
Call if the old sensor tests good, if the connector behind it is burnt, or if a correct new sensor does not clear F1-H. Each of those means the fault is in the wiring or the control, which needs the range opened and live measurements.
