The short answer

Unplug the appliance or switch off its breaker before removing any panel — a capacitor can hold a charge after the power is off. A tall cabinet is heavy and top-loaded, so get help before pulling one out.
When to call a technician
Call once the seals, the coil, the clearance and the setting are proven good and it still will not hold temperature — that points inside, where owner checks end.
