Most Likely Cause#
A Bertazzoni oven that runs hot or cold is most often a drifting temperature sensor, or an oven that simply needs its calibration offset set. After those come a partially failed heating element that cannot reach the set point, a slowing convection fan that makes heat uneven across the cavity, and a leaking door gasket. The useful split is whether the whole oven is off by a steady amount — which calibration or a drifted sensor explains — or whether food cooks unevenly side to side, which points at the fan or element.
Bertazzoni's electronic control reads a probe at the back of the cavity and cycles the element or gas to hold temperature, so the sensor and its calibration are where a steady error usually lives. Confirm the actual temperature with an oven thermometer before you order any part.

Sensor drift and calibration — check these first#
The probe at the rear of the cavity changes resistance with temperature, and over years that reading drifts, so the board holds the wrong temperature. Measure it at the connector behind the rear panel: at room temperature a Bertazzoni RTD sensor reads about 1,080 ohms, and a reading well off that means a failed sensor. If the sensor is good but the oven runs a steady 15 to 30 degrees off, calibration fixes it without any part. Put an oven thermometer at center rack, preheat, and compare to the set temperature; on PROF-series ranges you enter calibration by holding the temperature up and down buttons together for a few seconds, and MAST-series has it in the settings menu. Bertazzoni allows up to about 35°F of adjustment either way — if you need more than that, a component has actually failed and calibration alone will not do it. These faults turn up across the PROF304GASXT, PROF366GASXT, and MAST366GASXE ranges.
Element, convection fan, and gasket#
If the oven heats slowly or never reaches temperature, watch the elements during preheat — they should glow an even red-orange, and dark spots or a dim glow mean a partially failed element concentrating or losing heat. Uneven cooking with a correct set temperature usually means the convection fan is slowing on worn bearings, so the board reads the right temperature at the probe while parts of the cavity run 20 to 50 degrees off; a grinding or slow whoosh during convection confirms it. And an oven that cannot hold high heat may be leaking through a compressed or torn door gasket — the woven rope should be springy all around, and it clips into the frame channel for a tool-free swap.

Diagnostic Sequence#
- Put an oven thermometer at center rack and compare it to the set temperature.
- If the whole oven is off by a steady amount, measure the sensor — about 1,080 ohms at room temperature is healthy.
- If the sensor is good, set a calibration offset in small steps against the thermometer.
- Watch both elements glow evenly during preheat; dark spots mean a failing element.
- Listen for a slow or grinding convection fan if cooking is uneven side to side.
- Inspect the door gasket for flat or torn sections if it cannot hold high heat.
Repair or Replace#
A calibration offset is free and fixes a large share of these. A temperature sensor and a door gasket are inexpensive, easy parts. A heating element and a convection fan motor are moderate parts and mid-range jobs. There is rarely a big-ticket electronic outcome here.
