A single burner behaving badly is telling you the problem is local to it. When one flame runs tall on one edge and thin on the other, gas is being forced past blocked ports or under a cap that's sitting proud; the other burners running fine prove the supply and pressure are sound. Lift that burner's cap and head, soak away the grease, and work a straight pin — not a toothpick, whose tip can lodge in a port — through each opening until it's clear. Dry both pieces completely, since trapped moisture leaves a burner sputtering, and set the cap back so it seats flat and true rather than cocked to one side.
The flame's color and behavior point to the rest. A lazy, yellow flame is starved of air, usually from a fouled head or an air shutter that's out of adjustment; a flame that roars and lifts off the ports has too much air, the opposite problem. Steadily yellow, sooting flames deserve prompt attention, because incomplete combustion can produce carbon monoxide — clean the burner and, if it stays yellow, have the air corrected rather than cooking on it.
Two problems live past the burner itself. A burner that stays yellow after a genuine cleaning needs its air shutter adjusted, a precise gas-technician task and a must after any conversion from natural gas to propane. And when every burner runs weak together, the burners aren't the issue at all — look upstream to a shutoff that isn't fully open, a kinked flex line, or a propane conversion whose orifices were never matched to the fuel.
Before the holiday cooking#
Even heat matters most when you're holding a low simmer for a holiday sauce or a slow reduction. A ten-minute clean-and-reseat of the burners before the season restores most flames; if one still runs yellow afterward, or several run weak at once, have the air shutter and supply pressure checked with a visit. Cleaning ports and reseating caps is fine at home — shutter tuning, orifice changes, and gas-pressure work belong with a licensed technician.
