Bertazzoni Gas Stove Burner Won't Turn Off

Do this first#
Turn the wall shutoff behind the range a quarter turn so the handle sits across the pipe. Can't reach it? Shut the gas off at the main meter. Open a window, and don't run the stove again until the valve is repaired. Forcing the knob is the one thing that makes this worse, because a broken valve stem can leave gas flowing with no way to stop it short of the wall valve.
Why an Italian valve sticks open#
Bertazzoni ranges use Italian-made gas valves, often with metric fittings, behind the Master and Professional control panels. Three failures cause a burner to stay lit:
- Stuck valve (most common). Grease and debris creep into the valve stem, and years of heat cycling wear the seat, so the valve no longer seats fully when you turn off. Cleaning is not a reliable fix for a gas valve's internals — the valve is replaced.
- Stripped knob or shaft. The knob grips a D-shaped or splined shaft. If the knob's collar rounds out or the shaft strips, the knob spins freely while the valve stays open. Try a new knob first; if the shaft itself is damaged, the valve goes too.
- Broken valve spring. An internal spring helps snap the valve closed. When it breaks, gas pressure can drift the valve back open. The spring is not sold separately, so this is again a valve replacement.

A quick check with the gas off#
With the supply shut, pull the knob and look at the shaft and the knob's socket. Rounded splines or a chewed collar mean a knob or shaft problem; try a fresh knob. If a good knob turns the shaft cleanly but — with gas restored briefly under supervision — the burner still won't cut off, the valve body has failed internally and needs professional replacement.

A burner you can only shut off at the wall is not a burner you want going into a season of all-day cooking. Valve replacement on a freestanding range is typically a 45-to-90-minute job for a technician, longer on slide-in and built-in installs, and it involves opening the gas manifold and leak-testing afterward — reason enough to have it done properly rather than living with the wall valve as your off switch.
