Start With Calibration — the Five-Minute Check#
Before opening anything, rule out a calibration offset. Samsung ovens let you nudge the temperature reading through the control panel: press and hold Bake for several seconds until a "0" or the current offset appears, adjust up or down with the temperature controls, and press Start or Bake to save. The usable offset range is roughly plus or minus 35°F. If someone previously dialed in a positive offset, the oven will run hot by exactly that much, and zeroing it out is your whole repair. But if you need more than about 35°F of correction to get accurate temperatures, stop compensating — the sensor has drifted and should be replaced instead.

The tell is an oven that keeps climbing even after you cancel, or one that overheats with no input at all. Because the electric oven board sits on a live 240V circuit (gas models run on 120V), and because a welded relay is a safety issue, this is where DIY should stop and a technician should take over. If the oven is overheating on its own right now, shut it off at the breaker.
2. Temperature Sensor Reading Low#
A thermistor that drifts low tells the board the cavity is cooler than it really is, so the board overheats to compensate. Unlike a welded relay, a drifting sensor usually throws no code — the oven just runs consistently hot, and owners often "fix" it by setting a lower temperature without realizing the sensor failed. To check it, unplug the oven, reach the sensor connector at the rear, and measure resistance across the two wires: near 70°F a healthy Samsung thermistor reads roughly 1,080 to 1,100 ohms, and a reading outside about 1,000 to 1,200 ohms confirms a failed sensor. A sensor reading below that band is exactly what makes an oven overheat. Note that a fully open sensor instead throws an SE1 error and stops the oven, and a shorted one can drive it hot — either way the resistance test is decisive.
3. Door Gasket Leaking Heat#
Samsung ovens seal the cavity with a fiberglass rope gasket that compresses when the door shuts. Years of cycling from room temperature up past 450°F on normal bakes, and past 900°F during self-clean, harden the gasket until it no longer seals. The leak makes the oven overshoot, because escaping heat keeps triggering longer element runs to hold temperature, and it also drives up the exterior heat on the door and nearby cabinetry. A gasket that is stiff, cracked, or no longer springs back is worth replacing — it is a common, overlooked contributor to "runs hot."
4. Convection Fan Distribution Fault#

When a fan motor fails, heat stops circulating and pools, so one part of the cavity reads far hotter than the rest even when the average is fine — a "too hot" complaint that is really an uneven-heat problem. Select a convection cycle and listen at the rear wall: you should hear the fan within about 30 seconds. Silence means a dead motor; grinding or squealing means worn bearings. Because Air Fry mode leans hardest on forced air, its performance often degrades first.

An oven that runs hot by a fixed, predictable amount on every bake — always roughly the same margin over your setpoint — behaves like a calibration offset or a sensor drifting steadily low, both of which shift the whole temperature curve up without drama. An oven that climbs without limit, ignores the setpoint entirely, or keeps heating after you press Cancel is behaving like a welded relay, and that is the dangerous case that earns an E-27 and a trip to the breaker. An oven that is accurate in the center but scorches on one side or one rack is not truly overheating at all — it is a heat-distribution problem from a stalled convection fan. And an oven that only overshoots after long preheats or long bakes, with unusually hot exterior panels, points at a gasket leaking heat. Naming the pattern first keeps you from replacing a good sensor to chase a relay fault, or the reverse.
