Measure before you judge#
Start by hanging an independent oven thermometer in the center of the cavity and running the oven at a set point for a full preheat plus fifteen minutes. Compare the reading to the setting. A steady offset of a small number of degrees is normal drift you can correct; a reading off by tens of degrees, or one that wanders up and down, indicates a component problem rather than calibration.
The temperature sensor#
Gaggenau ovens read cavity heat with a resistance temperature sensor whose resistance changes predictably with temperature. As it ages, that relationship drifts, and the control then holds the oven at the wrong heat. A sensor reading out of range for the actual temperature, or one whose wiring has loosened, will make the oven run hot or cold and is the first component to check on a large error.

Use the calibration offset#

This is the right fix only when the error is small and consistent, not when it swings.
When the heat source is weak#
If the oven never reaches the set temperature at all, the problem is the heat source rather than the sensor — a tired bake igniter on a gas model that glows but cannot fully open its valve, or a failing element on an electric model. A cavity that undershoots badly and slowly points here, and it is a component repair.
