Fisher & Paykel builds these ranges with enclosed burners and its own gas-delivery design, but the valve behind each burner wears the same way any gas valve does. Over years of heat cycling the seat inside the valve loses its tight shut-off, and grease works its way into the stem, so the valve no longer closes fully when you turn to off. You can't reliably clean a gas valve's internals back to health — once it weeps at "off," it's replaced.
Before you assume it's the valve, though, rule out the cheaper fault: the knob and its shaft. The knob grips a flatted shaft, and if either wears round the knob will spin while the valve underneath stays put. With the gas shut off, pull the knob and look at the shaft and the socket — rounded flats mean a new knob might be all it takes. If a fresh knob turns the shaft cleanly and the burner still won't cut off, the valve body has failed inside. Less often, the small spring that snaps the valve shut has broken, letting gas pressure drift the valve open; that spring isn't sold on its own, so it's a valve replacement too.

Until it's fixed, keep the gas shut at the wall and don't run the range — a valve that won't seat can leak even while the burner is lit. The repair itself means opening the gas manifold, pulling the control panel, fitting the correct Fisher & Paykel valve, and leak-testing afterward, which is squarely a licensed technician's job.
