All of it depends on Wi-Fi — if the connection drops, whatever state was last set simply persists until it reconnects.

LG ThinQ and GE SmartHQ#

ThinQ locks washers, dryers, ovens, and dishwashers, with a deliberate twist: you can enable child lock from the app but must disable it at the physical panel, so a child can't unlock it with a phone. On combo range models, LG's oven child lock also disables cooktop ignition. SmartHQ locks GE Profile and Cafe appliances under Controls, keeps the lock through power outages in non-volatile memory on most models, and lets you disable remote-start capability separately.
